KOKIRI
And here's all the characters that I gave a definitive YES to during my second chance round. They are:

Now, we have the Kokiri, childlike beings that live in the Lost Woods and tend to the trees there. They would eventually evolve into Koroks by Wind Waker era, which seems to have resulted in them never appearing again in the Zelda series outside of Ocarina, unlike their Goron and Zora contemporaries. Previously, I only had Saria, but the rest can easily be an echo.
Here is their moveset:
Standard B: Deku Nut
About the same as before.
Side B: Mido
I forgot I gave Saria Mido as a shielding move. You know what? I'm keeping it.
Up B: Deku Sprout
Pretty much the same.
Down B: Baby Deku Tree
Pretty much the same.
Final Smash: The Great Deku Tree
Also, more or less the same.
Entrance: They will be dancing around and playing a pan pipe.
Taunts: All will be standard animations of the various Kokiri around the forest, like the guy throwing the rocks, the guy using a hoe, Mido's guard stance, etc.
Kirby Hat: Their green caps.
Kart: Made out of wood.
Special Move: I hope Saria's wasn't Mido again, because I want to use him here for defense. Saria can leave behind a Deku Nut.
Spirit Battle: A horde battle, with Saria, on Great Deku Tree.
Victory Screen: They will all dance around and play their pipes.
Losing Screen: The forest will burn and the Kokiri will run and hide.
Color Swaps: Every notably distinct Kokiri model, except Saria.
